Meal Plan for Oct 14-18

If you see my meal plan's dates, you'll realize that I only post for weeknights. This doesn't mean that I ignore my family on weekends, just that we don't always have the most organized meals on those days. We go out, or eat at my Mom's. Sometimes we just say, "Screw it!" and order out. If I do schedule those days in, you'll see it.

 

Breakfast:    I tend to go verrrry slow on weekday mornings. The last thing I want to do is stand over a stove, but I also don't want to throw junk at my kids every morning either. This week they'll get a few options:

    1) Bacon, Egg, Cheese on English Muffins - I'll make these ahead of time and freeze them.

    2.) Toast and Hot Tea for Farmer G. I swear, sometimes I think I'm living with an old British man trapped in an American 6yr old's body.

    3.) French Toast Muffins - I'll make these ahead and freeze as well.

Dinner:    

    Monday: Baked Chicken, Mashed Potatoes, Chuck Wagon Carrots

    Tuesday: Chicken Lo Mein - This is very similar to my Pork Stir Fry, but with different noodles, and a different variation of vegetables.

    Wednesday: Pepperoni Pizzas

    Thursday: Baked Rigatoni with Garlic Bread

    Friday: Grilled Cheese, Homemade Chicken Corn Chowder (I'll post that picture/recipe later this week when I make it.)

 

*As of right now, there is nothing planned for Saturday or Sunday since I'm not sure of our plans yet. Most likely, we'd use that time to eat leftovers. If I make anything different, I'll be sure to update the post.
