Veggie Side

So, PoPo and I are very big veggie eaters. Raw, sauteed, roasted, grilled. You name it, we'll try it.


Tonight, I decided to use what I had on hand, so here goes.

 

Ingredients:

 

1 medium sized zucchini, sliced

1 medium sized yellow squash, sliced

1 medium sized onion, chopped

3 cloves of garlic, chopped

1 container of white capped mushrooms, sliced

1 orange pepper, sliced

12 mini pearl tomatoes, sliced

2 teaspoons Smart Balance

Salt and Pepper to taste

 

 

Cook:

 

Place onions, garlic, peppers, zucchini, squash and Country Crock in a large sauce pan. Let them cook about 8 minutes, or until tender.

Add the rest of the veggies in the sauce pan. Add salt and pepper to taste.

Let cook an additional 5-7 minutes.

 

*My stove/oven tend to act wonky, so the cook time might not be as long for other ranges.

*I also add seafood, chicken, stir fry beef to this sometimes to make it the entire meal.
